Dorset Tea Bread
1 cup freshly brewed black tea
6 oz butter
8 oz soft brown sugar
12 oz mixed dried fruit
12 oz self-raising flour
1 tsp ground mixed spice
1 tsp ground cinnamon
3 eggs, beaten

Method
Preheat the oven to 160°C.
In a saucepan, bring to a boil the tea with butter, sugar and fruit. Over low heat simmer for approximately 15 minutes until the fruit is plump. Allow to cool slightly then stir in the flour, spices and eggs.
Spoon into a greased, 20cm cake tin. Bake for 2 hours until cooked through and a skewer, pushed into the cake, comes out clean.
Turn the bread out onto a wire rack to cool completely.
