Stilton Soup

A white cream soup flavoured with Stilton cheese, most commonly based on onion and cauliflower.

1 oz butter
1 onion, chopped
1 lb broccoli or cauliflower
1 pint stock
8 oz blue Stilton

Heat the butter in a large pan and soften the onion for 3 or 4 minutes, add the vegetables and stock and cook until very tender. Crumble in the cheese and stir until melted. Blend to a smooth cream and serve.
