SPINSTER'S CAKE. Why "spinster's" ? Anyway, as this cake is made without eggs, that is why I introduce it here. Required : One pound of flour, half a pound of castor sugar, quarter of a pound of butter or substitute, three-quarters of a pound of sultanas, a little chopped candled peel, a teaspoonful of baking powder, and a pinch of ginger. Beat sugar and butter to a cream, add sula tanas, mix baking-powder and spices in the four, and add it alternately with a little milk to the creamed but ter. Use sufficient milk to make quite a moist mixture. Bake in a greased tin for one and a half hours. Test, and it a warm skewer comes quite clean out of the middle of the cake, it is done.
