Rabbit in the Dairy

Game and Offal

Rabbit portions cooked in a milk sauce, commonly with onions, celery and bay and sometimes with bacon.

The name seems relatively recent, first appearing in the 1980's in, among other cookbooks, the Milk Marketing Board's 'The Dairy Book of British Food'.
