Herb Pudding

Accompaniments
Cumberland

Cooked greens, such as nettles, cabbage, leeks chopped very fine and boiled with onion, pearl barley, butter and egg, allowed to set.

Known from literary references and local information, a correspondent to 'Notes and Queries' of 1867 observed that it was then so popular that "market-gardeners sell the herbs ready-mixed".
