Hell Balls

Game and Offal

Minced game and bacon made into balls with chutney, cayenne, minced olives, game gravy, breadcrumbs and egg. Rolled in crumb and fried (J.Salmon)


Original Receipt adapted from J.Salmon

4 ox cooked game
4 oz cooked ham or lean, cooked bacon rashers
2 oz chutney
pinch of cayenne pepper
2 or 3 stoned olives, chopped
1 teaspoon game gravy
1 large egg, beaten
2 oz (approximately) fresh white breadcrumbs

Mince the meats, mix with the other ingredients. Form into 12 balls, roll in egg then breadcrumbs. Shallow fry.
