Harrogate Sponge

A fatless sponge cake of eggs and sugar with a little water beaten to a frothy cream over hot water, white wheatflour added. Baked, split and filled with cream.

Known only from the J.Salmon cookbook 'Yorkshire Teatime Recipes'.
