Gooseberry and Elderflower Jelly

Gooseberries boiled with sugar and elder flowers, strained and set as a jelly.

6 fresh elderflower heads (or 4 tbsp elderflower cordial)
4oz sugar
3/4 pint white wine
gelatin to set (about 1/2 oz)
