Cream Crisps or Palmier Creams

Pies and Pastries

Sandwich of two roughly heart-shaped sweet puff pastry biscuits, similar to palmiers, with whipped cream and jam between.

Palmiers, also known as 'Elephant ears', take their name from their rough resemblance to a palm tree in profile. They are made by rolling up a sheet of puff paste from opposite sides and cutting the resultant double-log into thin slices to bake strewn with sugar.
