Bolton Hotpot

A richer version of Lancashire Hotpot, often with kidney and mushrooms, but always with an added middle layer of oysters (White 1932, etc).

For some mysterious reason, Bolton, forty miles from the sea, once had one of the largest fish markets in the country.
