Puddings and Sweet Deserts

A sweet desert pudding made with potato, known from several newspaper reports of the early 20Cent.

Potato Duff
Then have you tried a plum duff made with potatoes? Mash 1lbboiled potatoes with a nut of butter and a little milk. Add 3oz. currants. 2oz. chopped peel, the grated rind and Juice of half a lemon, and three tablespoonfuls of sugar. Mix well. then stir a beaten egg and pinch of grated nutmeg. Spread buttered ple-dtsh with raspberry Jam, pour in the mixture, and bake In moderate oven for half an hour. Sprinkle with sugar and serve with custard.
