Cranham Honey Cake -

Ingredients:1/2 lb. self raising flour, 2 eggs, 5 oz. margarine, 21/2 oz. caster sugar, 3 oz. thick honey, grated lemon rind, 2 oz. glace cherries (chopped), pinch of salt, 4 tablespoons milk

Set oven to 375ºF or Mark 5. Cream together in a bowl the margarine, sugar and honey. Beat the eggs and then beat them into the mixture. Fold in the sieved flour, salt cherries and lemon rind. Add the milk and mix well. Turn into a greased and floured 7 inch round cake tin. Bake for one hour until golden brown. Allow to cool in the tin before turning out.
